In my experience, the most important thing in RV plumbing is to have all piping well supported—road bumps and vibration will put a lot of stress on fittings if the pipes aren’t properly secured. For the best no-leak RV plumbing, I always recommend using PEX to PEX brass fittings and stainless steel crimp rings, which are extremely durable and vibration-resistant. The Elkhart Supply 51164 BestPEX Fresh Water Adapter Coupler (1/2" PEX x 1/2" Polybutylene) is a great example of a quality fitting if you’re transitioning from older polybutylene piping to PEX, and it works perfectly with crimp rings for a secure, leak-free connection. Brass fittings like these are far less likely to crack than plastic ones, and they hold up much better over time. While Flair-it fittings are also a solid choice, nothing is totally foolproof, so I recommend regular visual inspections of all plumbing connections, especially after traveling.
