If nothing is open and your Artis Products PDSI-130-1240E Series 1 3.0 GPM RV Water Pump cycles every few seconds, and it's not a small leak (you already verified that's not the issue), backflow (also covered), so a pressure switch maybe the culprit. Toilets are a common culprit for pressure drops without visible leaks; not sure if you checked that, try closing the toilet valve to see if the cycling stops. Ideally, close a valve near the pump to isolate the issue.
Note, Artis Products appears to be out of business, I am not finding any info on them anymore and we haven't had this pump available since 2019. If you determine the pump is faulty, the SHURflo Revolution Pump offers similar 3.0 GPM performance and has proven reliable—here’s a link for reference: https://www.rvupgradestore.com/SHURflo-Revolution-By-Pass-Pump-p/86-8398.htm.
