If I cannot avoid installing the sensors far enough away from metal, can I just coat them with a rubber type spray? (Garnet 709 SeeLevel II Tank Monitoring System)

Garnet has used a rubber packing sheet in the past. You can find them in the plumbing section at Lowes or Home Depot. This would be better than a spray because its is not clear if the spray will cause issues with the sensor. These rubber packing sheets you can just tape over the sensor.
