can you use a PWD50-EPO surge protector on a 30 amp rv in a 30 amp park if you have the proper adapters?

We have a 30 RV now but are planning in the near future to get a bigger RV with 50 amp power.

Yes you can, however we do recommend matching your equipment with your RV. The PWD unit would work fine, however, on the PWD50-EPO (emergency power off) unit, it will shut off power if you go over current (draw more than 50A). However, since you coach is only 30A, you would really need to make sure you do not go over 30A. Your RV's main breaker should be working properly to prevent this. So all other error checks and faults would be fine, just you would not have the EPO ability to shut down for over current as it would shut down only at 50A or more and your coach is only 30A. Other than that, you would be fine using adapters.
