My book says a gas control #254, will a 253 work in place of the 254 (Marshall Excelsior MEGR-253 Two-Stage Automatic Changeover Regulator)

The model 254 was made by Marshall Gas Controls, which was a separate company from Marshall Excelsior. They have been out of business for several years. The MEC model MEGR-253 regulator is a direct drop-in replacement for their model 254.
