It should be pretty simple. You would just need to unscrew the locking nut and pull it out, put the new one in and tighten the locking nut back on.

EQ Systems 7463 replacement key tumbler for hydraulic jack leveling systems. Keyed ignition-style lock cylinder with 2 keys included. OEM replacement — toggle switches are not compatible.
