most rv are not made for 120psi water pressure so if the pressure is reduced will that have an effect on the unit?

125 PSI is just the Maximum for this water heater. It all depends on temperature of water and the amount of flow. If the water coming in is cold you will want the PSI lower so the water has time to warm up. But with a lower PSI you will have a slow flow of water out the shower head.
