Recently purchased two of these mirrors, both seem to work great on a short test drive.

Tow Mirrors
I installed one mirror by turning the knob clockwise till it stopped. When I installed the second mirror I turned the knob a few turns clockwise and it started clicking. Is this a release mechanism? Or did I strip the threads?

Did the suction cup work on the mirror to hole the mirror that you were attaching?

Yes, the suction cup "felt" like it was applying enough suction and in fact did not come off during my test drive. It just felt odd that one mirror knob turned down till I could no longer turn it, but the other one started "clicking" just a few turns in.

According to the manufacturer, as long as the mirror stays in place there is nothing to be concerned about.
