According to the manufacturer, the tank check could work...the trick would be finding a way to secure the sensor to the bottom of the keg without disturbing the integrity of the system. The sensors have batteries that will need to eventually be replaced. Plus, you'll need to remove the sensor when returning the keg so any kind of adhesive wouldn't be advised. Also, the sensor pad is located on the mounting side...care would need to be taken to not damage the sensor pad. You could always find a way to attach the sensor to the side of the keg. Once the contents reached the point where the sensor was mounted, it would indicate as empty and know exactly how much you have remaining in the keg.
