How hot the water gets depends on the incoming water source. The water heater will create a 50 - 60 degree rise in temperature from the incoming water. As far as the the melted pex line, the tech that i spoke with at atwood had never heard of that happening. He said the water heater would have stopped if the water temperature exceeded between 180 - 200 degrees F and the pex line is designed to withstand that high of a temperature. He thought possibly that if the RV was installed with a Generic Brand of line and not actually pex, that this could have occurred. Other than that, he wasn't really sure because there could have been a number of variables involved that could have caused this.
